Tofu capsicum roll

These soft and spicy rolls are a quick fix for tummies that are really hungry but need nothing heavy.

All you need:

1) 2 - Wheat Roti
2) Tofu cubes - 50 grams
3) Jeera powder - 1 tsp
4) Turmeric powder - a pinch
5) Garam Masala - 1/2 tsp
6) Salt to taste
7) Olive oil - 11/2 tsp
8) Diced Tomatoes - 3 tbsp
9) Diced capsicum - 3 tbsp
10) Onion - medium 1 - chopped
11) Coriander leaves - 1 tsp chopped
12) Tomato Ketchup - 2 tbsp
13) Soya sauce - 1 tsp
14) Vinegar - 1 tsp
15) Red chilli powder - 1/2 tsp


In a pan  heat a spoon of olive oil, add jeera powder, chilli powder, turmeric and fry for 2 min.
Next add the chopped onions, diced tomatoes and capsicums. saute till they soften a little but maintain the crunchiness of the veggies.
To this add a tbsp of tomato sauce, a tsp of vinegar and soya sauce each.
Sprinkle salt as per taste.
Add the garam masala to this mix of veggies. Now add the tofu cubes  and cook in low flame for another 5 min.

Place a Roti on the plate, spread a little of tomato sauce over the roti and fill the center of the roti with the veggie mixture prepared. Roll the roti and serve hot.
