Mango Banana Bread

The season you get mangoes I go nuts making the various stuff one can using raw mangoes to the over ripe ones. Here is one of those new attempts I tried out using ripe mangoes and the bananas.


Ingredients:
1 1/2 cup Mango pulp
1/2 cup Banana pulp
1/2 tsp Cinnamon powder
Jaggery - 1/4 cup(this quantity needs to be adjusted as per the mango sweetness. The mangoes I used were sugary sweet)
Wheat flour - 11/2 Cup
Maida/All purpose flour - 1 Cup
Walnuts - chopped - 1/2 cup.
Baking powder - 1 tsp
1/4 cup butter

Method:

Mix all the dry ingredients. To this add all the wet ingredients to the dry flour slowly without forming lumps. The consistency of the batter should be like that of any cake batter (not very thick neither thin).

Grease a loaf tin with butter and dust with All purpose flour. Pour the batter and bake @180 degree  centigrade for about 25 minutes. Check at every five minute interval so that you avoid burning of the sides of the bread.

Serve with a mango compost for enhancing the mango flavor.

Broken Wheat Kheer/Payasam

Festive season is round the corner. So I thought of posting an authentic south Indian sweet - The broken wheat payasam/kheer. The ingredients and method is very simple. This is a highly nutritious sweet and will be liked by everyone in the house - kid to the old.

Ingredients:
 Broken Wheat - 1 cup
 Coconut milk - 1 cup
 Plain milk - 1/2 cup
 Elachi powder - 1/2 tsp
 Jaggery - 1/2 cup
 cashew nuts chopped - 2 tsp
 Raisin - 2 tsp
 Ghee - 2 tsp
 Cloves - 2




Method:

Cook broken wheat till tender( Either you can pressure cook or you can cook in a pan lid covered)
Next in a pan, add jaggery and milk , bring to a boil. Add coconut milk, elachi powder and cloves to this sweetened milk. Next add the cooked broken wheat and continue cooking in low flame for another 10 min with lid closed.

On the other side, heat ghee in the a small pan and roast cashew nuts and raisins. Add this to the boiling kheer and serve the kheer/payasam for the entire household either hot or cold. Its delicious and
healthy.

Mosaru Kodubale ~ A fried snack

I was always thrilled by the name of kodubale since my childhood, this inquisite twist to the traditionally made snack brought the enthusiasm in me to try it out this Janmashtami.


Ingredients: 1 cup rice flour
                    3/4 cup thick yogurt/curds
                    3 green chillies
                    1/2 tsp salt
                    Oil to fry


Method:
Grind or pound green chillies with salt and make a paste.
Add about 1/4 cup of water to the 3/4 cup yogurt/curds and keep it on low flame until it becomes warm.
Next add the chilli paste and stir the mixture.
Slowly add rice flour and stir and ensure no lumps are formed. cook for about 2 min.

Shape dough in the form of koduabale.

In a pan heat oil to fry kodubale.

Careful Tip: If the curds is sour, then ensure that you are not very close to the oil pan, chances of the kodubale spurting up might be there.

Tofu capsicum roll

These soft and spicy rolls are a quick fix for tummies that are really hungry but need nothing heavy.

All you need:

1) 2 - Wheat Roti
2) Tofu cubes - 50 grams
3) Jeera powder - 1 tsp
4) Turmeric powder - a pinch
5) Garam Masala - 1/2 tsp
6) Salt to taste
7) Olive oil - 11/2 tsp
8) Diced Tomatoes - 3 tbsp
9) Diced capsicum - 3 tbsp
10) Onion - medium 1 - chopped
11) Coriander leaves - 1 tsp chopped
12) Tomato Ketchup - 2 tbsp
13) Soya sauce - 1 tsp
14) Vinegar - 1 tsp
15) Red chilli powder - 1/2 tsp

Method:

In a pan  heat a spoon of olive oil, add jeera powder, chilli powder, turmeric and fry for 2 min.
Next add the chopped onions, diced tomatoes and capsicums. saute till they soften a little but maintain the crunchiness of the veggies.
To this add a tbsp of tomato sauce, a tsp of vinegar and soya sauce each.
Sprinkle salt as per taste.
Add the garam masala to this mix of veggies. Now add the tofu cubes  and cook in low flame for another 5 min.

Place a Roti on the plate, spread a little of tomato sauce over the roti and fill the center of the roti with the veggie mixture prepared. Roll the roti and serve hot.

Broccoli Soup

The pleasure of a bowl of hot soup on a cold evening closer than heaven I must say. This home made Broccoli soup was a plus on the healthy note as well. Its fairly simple and easy to prepare.

Ingredients:
1. 100 grams Broccoli
2. 2 Tsp Olive oil
3. A small bunch of Coriander leaves
4. Jeera powder - 1/4 Tsp
5. Vinegar - 1 Tsp
6. Corn Starch - 1 Tbsp
7. Chilli powder - 1 Tsp
8. Chopped onions - 1/4 cup
9. Garlic cloves - 4 to 5[optional]
10. Salt to taste.



Steam Broccoli in plain water with a pinch of salt. Meantime in a pan heat the olive oil and add Jeera powder, chilli powder, chopped onions , garlic. Saute till the onion turns translucent. Now add boiled broccoli , coriander and cook for another 2 minutes. Mix corn starch a cup of  water and add it to the pan. Add vinegar and salt to taste. Cook for next 5 minutes by adding a cup of water in  intervals of a minute each.  Cool the broth for a while and grind it . Boil this soup for another 5 minutes and serve hot with some toasts.
